I decided to call this post “plantains for everyone.” A staple food in Ecuador. The plantains (which resemble bananas) are used as a staple starch in the Ecuadorian diet. The plantain can be cooked in different ways. Ripened for a sweet treat, steamed or baked similar to potatoes, and even fried like french fries. The Ecuadorians love it, especially on the coast. The plantain is plentiful and massed produced both locally and for export. A whole rack of plantains can be purchased for under $5.00.
